Lemon Chicken from the Oven: Recipe for a Whole Chicken

Quantity for 4 people:

1 chicken
1 large organic lemon
2 cloves of garlic
10 sprigs of fresh thyme
600 g young potatoes
olive oil
Salt pepper

1. Preheat the oven to 190 ° C.

2. Cut half of the organic lemon into slices. Squeeze the second half of the lemon.

3. Chop the garlic cloves into small pieces. Mix thyme, a pinch of salt and pepper, a little olive oil and lemon juice and pound in a mortar.

4. Rub part of the marinade on the chicken. Rub the inside of the chicken with the rest of the marinade.

5. Incise the skin of the chicken. Carefully slide lemon wedges under the chicken's skin. Tie the leg ends of the chicken together with kitchen twine *.

6. Place the young potatoes, garlic cloves and lemon wedges in a baking dish, salt and pepper everything. Then place the chicken on top.

7. Put the casserole dish in the preheated oven at 190 ° C and cook for 75 minutes. Turn the potatoes in between. Use a wooden skewer to check the cooking level of the chicken. If the juice comes out clear, the meat is cooked through and juicy.

8. Remove lemon peel and kitchen twine. Serve the lemon chicken with the potatoes.
